Ingredients
- 1 pound ground spicy Italian sausage
- 3 garlic cloves, minced
- 1 medium white onion, diced
- 1.5 pounds Yukon Gold potatoes, diced
- 5–6 cups chicken stock
- 2–3 cups chopped fresh kale
- 1 cup heavy whipping cream
- 6 pieces bacon, cooked and crumbled
- Salt and pepper to taste
Instructions
- In a large stockpot over medium-high heat, brown the Italian sausage until fully cooked. Use a slotted spoon to remove it from the pot, leaving behind some grease.
- Sauté the diced onion in the reserved grease for about 5 minutes until softened, then add minced garlic and sauté for one more minute.
- Add diced potatoes and chicken stock to the pot along with the cooked sausage. Bring to a simmer and cook on medium-low heat until potatoes are tender (about 10 minutes).
- Stir in chopped kale and heavy cream; simmer for an additional 5 minutes until heated through. Season with salt and pepper to taste.
