  • 2 cans (29 oz each) peaches in heavy syrup
  • 1/4 cup granulated sugar
  • 5 tbsp melted unsalted butter
  • 2 1/2 tsp lemon juice
  • 2 tsp vanilla extract
  • 2 cups flour
  • 2 tsp baking powder
  • 1 1/2 cups granulated sugar (for topping)
  • Cinnamon and nutmeg (for flavor)

Instructions

  1. Preheat oven to 400°F.
  2. Pour contents of one can of peaches into a 9×13 pan; drain the second can and add only the peaches.
  3. Mix melted butter, salt, lemon juice, sugar, and vanilla with the peaches.
  4. In a separate bowl, combine flour, sugar, baking powder, cinnamon, nutmeg, and salt. Pour over peach mixture.
  5. Drizzle melted butter evenly over the topping.
  6. Bake for 15 minutes at 400°F; then lower to 375°F and continue baking for about an hour until golden brown.
