- ⅔ cup granulated sugar
- ⅓ cup cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract

- 2 ¼ cups all-purpose flour
- 1 cup cold unsalted butter (cut into cubes)
- 7 tablespoons ice-cold water
- 1 egg
- 1 tablespoon milk
Instructions
- In a large bowl, mix together the pitted cherries, granulated sugar, cornstarch, lemon juice, vanilla extract, salt, and optional almond extract. Set aside.
- For the crust, pulse flour, sugar, and salt in a food processor. Add cold butter cubes until pea-sized. Gradually add ice-cold water until dough forms.
- Shape dough into disks and refrigerate one disk. Roll out the other into a circle for the base pie crust.
- Pour cherry filling into the crust and dot with butter. Roll out remaining dough for top crust; place over filling or create a lattice design.
- Brush with egg wash and bake at 400°F for the first 20 minutes; then reduce to 350°F for another 40–50 minutes until bubbly.
