Ingredients

  • 2 lbs chicken thighs or breasts (cut into 1" cubes)
  • 1/3 cup brown sugar
  • 1/3 cup low sodium soy sauce
  • 2 cloves garlic (minced)
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • Sesame seeds and chopped green onions for garnish

Instructions

  1. Make the teriyaki sauce by mixing cornstarch with water in a bowl. In a saucepan, combine the remaining ingredients and stir in the cornstarch mixture. Bring it to a simmer until slightly thickened, then cool.
  2. Marinate the chicken cubes in half of the cooled sauce for at least 30 minutes.
  3. Thread marinated chicken onto skewers and preheat your grill to medium heat.
  4. Grill the skewers for about 20-30 minutes, turning every few minutes and basting with leftover sauce until fully cooked (165°F internal temperature).
  5. Serve garnished with sesame seeds and green onions.
