  • 1 pound rotini
  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 15 ounces canned black beans (drained and rinsed)
  • 8 ounces canned corn (drained)
  • 2 cups halved cherry tomatoes
  • 16 ounces Catalina dressing
  • 3 tablespoons sour cream
  • 9 ounces Nacho Cheese Doritos (crushed)
  • 2 cups shredded iceberg lettuce
  • ¼ cup chopped cilantro

Instructions

  1. Cook rotini in boiling water according to package directions. Drain and rinse with cold water.
  2. In a skillet over medium heat, brown the ground beef and drain excess grease. Add taco seasoning and ¼ cup water; cook until liquid evaporates.
  3. In a large bowl, combine cooked pasta, seasoned beef, black beans, corn, cherry tomatoes, and cheese.
  4. In a small bowl, whisk together Catalina dressing and sour cream until smooth.
  5. Pour dressing over pasta mixture and stir until coated evenly.
  6. Before serving, mix in crushed Doritos and shredded lettuce. Garnish with cilantro.
