  • 1 can black beans (drained and rinsed)
  • 1 can corn (drained)
  • 1 cup diced bell pepper
  • 1 cup diced red onion
  • 1 cup halved cherry or grape tomatoes
  • 1/2 cup chopped cilantro
  • 2 cups chopped grilled chicken
  • 1 cup chipotle ranch dressing

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse with cold water; allow to drip dry.
  2. Prepare the vegetables: drain black beans and corn, then rinse. Dice bell pepper and red onion, halve the tomatoes, and chop cilantro.
  3. In a large mixing bowl, combine cooked pasta, black beans, corn, bell pepper, red onion, tomatoes, cilantro, and grilled chicken.
  4. Pour in the chipotle ranch dressing and mix well until evenly coated.
  5. Cover and chill in the refrigerator for at least one hour before serving.
