- 2 pounds yellow squash (sliced ¼ inch thick)
- 1/4 cup butter
- 1/2 cup diced onion
- 1/2 teaspoon garlic powder
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- ½ cup sour cream
- 1 large egg (beaten)
- 1 cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- 1 cup butter crackers (finely crushed)
Instructions
- In a large skillet, melt 1 tablespoon of butter over medium heat. Sauté the diced onion until soft and translucent (about 7–8 minutes).
- Add sliced yellow squash to the skillet and cook for 10–12 minutes, stirring frequently until tender.
- Drain the cooked squash mixture in a colander lined with a towel for at least 5 minutes to remove excess moisture.
- In a mixing bowl, combine the drained squash, garlic powder, salt, black pepper, sour cream, beaten egg, cheddar cheese, and half of the Parmesan cheese.
- In another bowl, stir melted butter into crushed crackers along with remaining Parmesan cheese.
- Transfer the squash mixture to a baking dish and top evenly with the cracker mixture.
- Bake in a preheated oven at 350°F for about 25 minutes until golden brown and bubbly.
