Ingredients

Scale
  • 1 pound ground beef (80/20)
  • 6 slices American cheese
  • 6 flour tortillas (street taco size)
  • Shredded lettuce
  • Burger pickles
  • ½ cup mayo
  • ¼ cup ketchup
  • 1 tablespoon dill pickles (chopped)
  • ½ teaspoon garlic powder
  • ½ teaspoon pickle juice
  • ½ teaspoon soy sauce
  • ½ teaspoon rice vinegar
  • ¼ teaspoon paprika
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon ground black pepper

Instructions

  1. Make the burger sauce by mixing mayo, ketchup, chopped dill pickles, garlic powder, pickle juice, soy sauce, rice vinegar, paprika, kosher salt, and ground black pepper in a bowl. Set aside.
  2. In another bowl, mix ground beef with kosher salt and black pepper until just combined. Form into six equal-sized balls.
  3. Preheat a flat top griddle to medium-high heat. Flatten each meatball using a burger press and cook for about 40 seconds per side. Add cheese on top during the last minute of cooking.
  4. Toast tortillas on the griddle for about 2 minutes until warm.
  5. Assemble tacos by placing cooked patties on tortillas and topping with lettuce, burger pickles, and dollops of sauce.
