  • 1 pound shrimp (3140 size), thawed and peeled
  • 2 sticks celery, chopped small
  • 2 tablespoons red onion, chopped small
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice + zest of 1 lemon
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Boil salted water in a large pot, cook pasta al dente according to package instructions. Drain and rinse with cool water.
  2. Prepare the shrimp: Thaw shrimp under cool water if frozen. Peel and devein if needed. Boil fresh water and cook shrimp for 2-3 minutes until pink. Transfer to an ice bath to stop cooking; pat dry.
  3. Combine ingredients: In a large bowl, mix cooked pasta, shrimp, celery, and red onion.
  4. Make the dressing: In a small bowl, whisk together mayonnaise, lemon juice and zest, dill, salt, and pepper until smooth.
  5. Toss salad: Pour dressing over the pasta mixture and toss until evenly coated. Chill before serving.
