Ingredients
- 12 oz. rhubarb (cleaned and diced)
- 1.8 oz. raspberries (smashed)
- 1 tbsp. lemon juice
- 1/2 cup sugar (for filling)
- 1/2 cup sugar (for streusel)
- 2 cups all-purpose flour
- 1 cup butter (in small pieces)
- 1 tsp. vanilla extract
- Optional: confectioners’ sugar for glaze
Instructions
- Marinate rhubarb: Combine diced rhubarb, smashed raspberries, and sugar in a bowl; cover and let sit for an hour.
- Prepare streusel: Mix flour, sugar, salt, butter, and vanilla until crumbly; press half into a lined baking tin.
- Bake crust: Preheat oven to 375°F; bake crust for 15 minutes until golden.
- Assemble & bake: Mix marinated rhubarb with lemon juice and flour; pour over baked crust; sprinkle remaining streusel on top and bake at 350°F for 40-50 minutes until golden brown.
