  • 1/2 cup white vinegar
  • 1 cup water
  • 2 teaspoons kosher salt
  • 2 tablespoons honey
  • 3 tablespoons pickling liquid
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • herbs from pickling liquid, minced
  • salt and pepper to taste

Instructions

  1. Prepare the pickling liquid: Combine white balsamic vinegar, water, kosher salt, and honey in a saucepan; heat until dissolved. Cool and pour over quartered peaches. Let sit for 30 minutes.
  2. Assemble skewers: Wrap each peach slice with prosciutto. Thread wrapped peaches onto skewers with basil leaves and mozzarella pearls.
  3. Make dressing: Whisk together reserved pickling liquid, olive oil, garlic, herbs, salt, and pepper.
  4. Serve: Drizzle skewers with dressing just before serving.
