  • 16 ounces mascarpone cheese
  • 1 jar (10 ounces) lemon curd

Instructions

  1. Preheat your oven to 350°F and prepare three 8-inch round pans with parchment paper and grease.
  2. In a large bowl, mix sugar, oil, eggs, and lemon extract for about 2 minutes. Add lemon zest, juice, and sour cream; mix until combined.
  3. In another bowl, whisk flour, baking powder, and salt. Gradually incorporate the dry ingredients into the wet mixture along with buttermilk.
  4. Toss blueberries in flour and gently fold them into the batter.
  5. Pour evenly into prepared pans and top with remaining blueberries. Bake for 20-23 minutes until a toothpick comes out clean.

  7. For frosting, beat chilled mascarpone cheese and gradually add heavy cream until soft peaks form. Mix in powdered sugar and vanilla until stiff peaks form.
