- ½ cup milk
- ⅓ cup vegetable oil

- ½ cup icing sugar
- 1–2 tablespoons lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together flour, baking powder, sugar, and salt.
- In another bowl, mix milk, oil, egg, vanilla extract, lemon juice, and zest.
- Combine wet ingredients into dry ingredients; fold in 1 cup of blueberries gently.
- Pour batter into the prepared pan; top with remaining blueberries.
- Bake for about 55 minutes or until a toothpick comes out clean.
- Allow to cool for at least 10 minutes before drizzling with lemon glaze made from icing sugar and lemon juice.
