Ingredients
- 1 lb boneless, skinless chicken thighs or breasts

Instructions

- Sear chicken in oil for 3–4 minutes on each side until golden brown. Remove and set aside.
- In the same pan, toast uncooked rice for 1–2 minutes.
- Add chicken broth, BBQ sauce, and honey; stir to combine.
- Return chicken to the pan; bring to a gentle boil. Reduce heat to low and cover.
- Cook for 15 minutes; add mixed vegetables on top and cook for another 5 minutes until everything is tender.
- Let rest for 5 minutes before fluffing rice; serve garnished with green onions or parsley.
