  • 1 teaspoon baking soda

  • 1 3/4 cups whole wheat flour

Instructions

  1. Preheat your oven to 350 degrees F and prepare a 9" x 5" loaf pan with parchment paper or cooking spray.
  2. In a mixing bowl, mash the ripe bananas until smooth. Add squeezed-dry zucchini, egg, olive oil, maple syrup, vanilla extract, cinnamon, baking powder, baking soda, and salt. Whisk until combined.
  3. Gently stir in whole wheat flour with a spatula until just combined—avoid overmixing.
  4. Pour the batter into the prepared loaf pan and level it off.
  5. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
