Ingredients

  • 2 medium zucchinis
  • 2 cups cherry tomatoes
  • 8 oz (220g) pasta (fusilli recommended)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon fennel seeds
  • 1/4 cup vegetable stock
  • Optional: 1/2 teaspoon cayenne pepper

Instructions

  1. Cook the pasta in a large pot of boiling water according to package directions until al dente, then drain and set aside.
  2. In a skillet, heat olive oil over medium heat and sauté diced zucchini until golden. Remove from skillet.
  3. In the same skillet, add cherry tomatoes, black pepper, fennel seeds, garlic powder, cayenne pepper (if using), and vegetable stock. Cover and cook until tomatoes blister.
  4. Push tomatoes aside and add cooked zucchini and pasta to the skillet. Stir well to combine and heat through.
  5. Serve immediately with grated parmesan and fresh herbs.
