Ingredients
- 1 lb Chicken Breast (cut into 1/2-inch pieces)
- 8 oz Chickpea Pasta
- 1 Orange Bell Pepper (diced)
- 1 cup English Cucumber (diced)
- 4 oz Grape Tomatoes (sliced in half)
- 2 oz Feta (crumbled)
- ¼ cup Fresh Parsley (chopped)
- 2 Lemons (zest and juice)
- ¼ cup Extra Virgin Olive Oil
- 3 Garlic Cloves (minced)
- ½ tablespoon Dried Oregano
- Salt and Pepper to taste
Instructions
- In a mixing bowl, combine minced garlic, lemon juice, olive oil, oregano, salt, pepper, and lemon zest to create the marinade.
- Place chicken in a plastic storage bag with half of the marinade; refrigerate for about 30 minutes.
- Cook chickpea pasta according to package instructions; drain and set aside to cool.
- In a large skillet over medium heat, cook marinated chicken for about five minutes on each side or until fully cooked.
- In a large mixing bowl, combine cooled pasta with cooked chicken, diced bell pepper, cucumber, grape tomatoes, crumbled feta cheese, and parsley; toss with remaining marinade.
