  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar
  • 3 tablespoons Dijon mustard
  • 3 tablespoons honey
  • 1 pound carrots (halved or quartered)
  • 1 pound asparagus (trimmed)
  • 2 zucchini (cut into sixths)
  • 2 yellow squash (cut into sixths)
  • 1 large red bell pepper (cut into strips)

Instructions

  1. In a measuring pitcher, combine olive oil, balsamic vinegar, Dijon mustard, honey, thyme, garlic powder, salt, and pepper. Whisk until smooth.
  2. Prepare vegetables by cutting them into long strips and placing them on a large rimmed baking sheet.
  3. Pour the marinade over the vegetables and gently toss to coat thoroughly.
  4. Allow to marinate for at least 30 minutes.
  5. Preheat grill to medium heat (about 350°F).
  6. Grill carrots for 3-4 minutes before adding the remaining vegetables.
  7. Grill all veggies for another 8-10 minutes until tender, flipping once.
