  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster sugar
  • 90 g Demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g dark or milk chocolate chips

Instructions

  1. Preheat your oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional heating. Line a baking tray with parchment paper.
  2. In a heatproof bowl, melt dark chocolate and butter over simmering water. Stir in vanilla extract once melted.
  3. In another bowl, whisk together caster sugar, Demerara sugar, and eggs on high speed until fluffy—about five minutes.
  4. Sift flour, cocoa powder, baking powder, and salt together in a separate bowl. Add chocolate chips to this mixture.
  5. Gently fold the melted chocolate into the egg mixture, then carefully incorporate the dry ingredients until combined.
  6. Scoop tablespoons of batter onto the prepared tray, spacing them apart. Bake for 12-14 minutes or until set with crackly tops.
  7. Sprinkle with sea salt if desired and cool on the tray before transferring to a wire rack.
