- 2 lbs fresh peaches (rinsed & dried)
- 1 lb ripe tomatoes (diced)
- 1 small bunch cilantro (finely chopped)
- 1/3 cup red onion (minced)
- Juice of 1 lime
- 1 jalapeño (seeded & minced)
- 1/2 tsp salt
- Ground black pepper to taste
Instructions
- Prepare the peaches by cutting them into quarters and removing the pit. Dice the peach pieces and place them in a large mixing bowl.
- Add diced tomatoes, minced red onion, minced jalapeño, lime juice, salt, and black pepper to the bowl with the peaches.
