- 1 tsp lemon juice
- 1½ cups all-purpose flour
- 1 stick Earth Balance® butter
- 1½ tsp baking powder
- ½ tsp salt
- 2 tsp corn starch
- ½ tsp cinnamon
- ¼ tsp nutmeg
Instructions
- Preheat your oven to 425°F.
- In a mixing bowl, combine sliced peaches with brown sugar, white sugar, corn starch, lemon juice, cinnamon, and nutmeg; stir until coated.
- Pour the peach mixture into an ungreased 9 x 13 baking dish and bake for 10 minutes.
- In another bowl, whisk together flour, sugars, baking powder, and salt. Cut in butter until it resembles coarse crumbs.
- Stir in boiling water until just combined.
- Spoon topping over the baked peaches and sprinkle with additional sugar and cinnamon.
