- 1 (14 ounce) can black beans (drained & rinsed)
- 1 (12 ounce) can corn (drained)
- 1 (15.5 ounce) jar salsa
- 2 cups shredded Mexican cheese blend (or cheddar)
Instructions
- Preheat the oven to 350F.
- In a skillet over medium-high heat, add olive oil and ground beef. Cook for about 5 minutes until browned.
- Stir in chopped onion, chili powder, garlic powder, and ground cumin; cook for an additional 5 minutes.
- Spread crushed Doritos evenly in a 9×13 casserole dish.
- Drain excess fat from the skillet and stir in black beans, corn, salsa, and half of the shredded cheese; warm through.
- Spoon the beef mixture over the Doritos layer and top with remaining cheese.
- Bake uncovered for 15–20 minutes until cheese is melted.
