  • 1 pound lean ground beef
  • 1/2 medium onion (chopped)
  • 1 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 2 cups crushed Doritos (Nacho Cheese flavor)
  • 1 (14 ounce) can black beans (drained & rinsed)
  • 1 (12 ounce) can corn (drained)
  • 1 (15.5 ounce) jar salsa
  • 2 cups shredded Mexican cheese blend (or cheddar)

Instructions

  1. Preheat the oven to 350F.
  2. In a skillet over medium-high heat, add olive oil and ground beef. Cook for about 5 minutes until browned.
  3. Stir in chopped onion, chili powder, garlic powder, and ground cumin; cook for an additional 5 minutes.
  4. Spread crushed Doritos evenly in a 9×13 casserole dish.
  5. Drain excess fat from the skillet and stir in black beans, corn, salsa, and half of the shredded cheese; warm through.
  6. Spoon the beef mixture over the Doritos layer and top with remaining cheese.
  7. Bake uncovered for 15–20 minutes until cheese is melted.
  8. Serve hot with optional toppings like sour cream, avocado, or cilantro.
