  • 2 lbs boneless chicken thighs (or breasts)
  • 1/2 cup coconut aminos (or soy sauce)
  • 1/4 cup pineapple juice
  • 1/4 cup tomato paste
  • 46 pitted dates (or 1/4 cup maple syrup)
  • Spices: garlic powder, chili powder, smoked paprika

Instructions

  1. Soak the pitted dates in warm water for 10–15 minutes.
  2. In a blender or food processor, combine soaked dates, coconut aminos, pineapple juice, tomato paste, garlic powder, chili powder, and smoked paprika. Blend until smooth.
  3. Place chicken thighs in a shallow bowl and pour the marinade over them. Coat thoroughly and refrigerate for at least 30 minutes (up to 24 hours).
  4. Preheat the grill to high heat (about 500°F). Grill marinated chicken and pineapple slices for 5–6 minutes on each side until cooked through and caramelized.
