Ingredients
- 4 ripe tomatoes (sliced)
- 1/2 cup onion (chopped)
- 1 clove garlic (minced)
- 2 tablespoons fresh oregano (chopped)
- 6–7 leaves basil (chopped)
- 2 cups mozzarella cheese (shredded)
- 2 eggs (beaten)
- Salt and pepper to taste
- 1 tablespoon butter
Instructions
- Slice tomatoes and sprinkle lightly with salt; let sit for 10 minutes to drain excess moisture.
- In a skillet, melt butter over medium heat. Sauté chopped onions and minced garlic until soft (about 8 minutes). Transfer to a bowl.
- Add mozzarella cheese, beaten eggs, herbs, black pepper to the bowl with sautéed onions and garlic; mix well.
- Drain tomatoes and blot with paper towels. Layer tomatoes in a greased pie pan, topping each layer with the cheese mixture until all ingredients are used.
- Preheat the oven to 375°F (190°C) and bake for 30-40 minutes or until edges are golden brown.
- Allow to cool for 5-7 minutes before slicing and serving.
