  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • â…“ cup mayonnaise
  • â…“ cup sour cream
  • 1 large lime (zested and juiced)
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. In a bowl, mix mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper for the dressing. Set aside.
  2. Boil water in a large pot; add shrimp and cook for 2 to 3 minutes until pink.
  3. Prepare an ice water bath. Use a skimmer to transfer cooked shrimp to the bath for cooling.
  4. Chop cooled shrimp into bite-sized pieces and combine with cucumber, green onions, and dressing in a bowl. Mix well.
