  • 1/3 cup maple syrup
  • 1/4 cup unsweetened applesauce
  • 1/4 cup creamy almond butter
  • 1/4 cup non-dairy milk (almond or coconut)
  • 1 tablespoon olive oil or coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini (water squeezed out)
  • 2/3 cup chocolate chips

Instructions

  1. Preheat your oven to 400°F and line a muffin pan with liners.
  2. Shred zucchini using a box grater and wring out excess water.
  3. In one bowl, mix almond flour, cocoa powder, baking soda, and salt.
  4. In another bowl, combine the egg, maple syrup, applesauce, almond butter, non-dairy milk, olive oil, and vanilla extract.
  5. Pour the wet mixture into the dry ingredients; stir until combined. Fold in zucchini and chocolate chips.
  6. Fill muffin cavities evenly with batter and bake for 22-25 minutes or until a toothpick comes out clean.
