  • 1 cup finely grated zucchini
  • 1 cup mashed bananas
  • 1 ½ cups chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8" x 4" loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, cream of tartar, and salt; set aside.
  3. In an electric stand mixer, beat canola oil and granulated sugar until combined. Add the beaten egg and mix well. Gradually incorporate the grated zucchini.
  4. Alternately add the dry ingredients and mashed bananas into the wet mixture until just combined.
  5. Gently fold in chocolate chips with a rubber spatula.
  6. Pour batter into the prepared loaf pan and bake for about 50 to 55 minutes or until a toothpick comes out clean. Let cool before slicing.
