- ½ cup canola oil
- ⅔ cup granulated sugar
- 1 large egg (lightly beaten)
- 1 cup finely grated zucchini
- 1 cup mashed bananas
- 1 ½ cups chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8" x 4" loaf pan.
- In a medium bowl, whisk together flour, baking soda, baking powder, cream of tartar, and salt; set aside.
- In an electric stand mixer, beat canola oil and granulated sugar until combined. Add the beaten egg and mix well. Gradually incorporate the grated zucchini.
- Alternately add the dry ingredients and mashed bananas into the wet mixture until just combined.
- Gently fold in chocolate chips with a rubber spatula.
- Pour batter into the prepared loaf pan and bake for about 50 to 55 minutes or until a toothpick comes out clean. Let cool before slicing.
