  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • Juice of 1 lemon
  • 1/4 cup white wine (optional)
  • 2 tablespoons unsalted butter
  • 2 tablespoons fresh parsley, chopped
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. Season chicken strips with salt and pepper. In a skillet, heat olive oil over medium-high heat and cook the chicken until golden brown (3-4 minutes per side). Remove and set aside.
  2. In the same skillet, sauté minced garlic until fragrant. Add chicken broth and lemon juice, scraping up browned bits. Simmer for 3-4 minutes.
  3. Stir in butter until melted. Return chicken to the skillet and coat with sauce.
  4. In a saucepan, combine rice, chicken broth, and minced garlic; bring to boil, then simmer until rice is tender (15-20 minutes). Stir in Parmesan cheese.
  5. Serve chicken over garlic parmesan rice and garnish with parsley.
