  • 3 cloves garlic (minced)
  • 3 tablespoons olive oil (for chili oil)
  • 1 tablespoon red chili flakes
  • 1 teaspoon paprika
  • 1 small garlic clove (thinly sliced)
  • 1 teaspoon soy sauce
  • Salt and pepper (to taste)

Instructions

  1. In a deep skillet, heat 2 tablespoons of olive oil over medium heat. Add sliced onions with a pinch of salt and caramelize for about 25–30 minutes until golden brown, stirring occasionally. Add minced garlic in the last 5 minutes.

  3. Boil salted water in a large pot and cook pasta according to package instructions until al dente, reserving 1 cup of pasta water before draining.
  4. Combine cooked pasta with caramelized onions and drizzle with chili oil; toss well to coat, adding reserved pasta water as needed for consistency.
