Instructions

  1. Wash and blanch fresh peaches in boiling water for about 30 seconds. Transfer them to cold water immediately to halt cooking and ease peeling.
  2. Clean canning jars and warm them in an oven.
  3. Prepare your light syrup by mixing sugar with water or honey with water, bringing it to a boil, and keeping it warm.
  4. Halve the peaches, remove pits, and pack them tightly into hot jars. Cover with any leftover peach juice before adding warm syrup, leaving about 1/2 inch headspace.
  5. Process jars in a boiling water bath: pint jars for 20 minutes; quart jars for 25 minutes.
  6. Remove jars carefully and let cool completely on a towel.
