- 3 large eggs
- 1/3 cup vegetable oil
- 1/2 cup peach nectar or juice
- 1 lb fresh peaches, peeled and chopped
- 1/2 cup unsalted butter
- 1/2 cup heavy cream
- 1 cup packed brown sugar
- 1 tsp vanilla extract
- 2 1/2 cups confectioner's sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the yellow cake mix, eggs, vegetable oil, and peach nectar. Mix until smooth.
- Gently fold in the chopped peaches.
- Pour the batter into a greased 9×12 inch baking pan and bake for approximately 28 minutes or until a toothpick comes out clean.
- For the frosting, heat butter, heavy cream, and brown sugar in a saucepan until boiling. Remove from heat, add vanilla and confectioner’s sugar, whisk until smooth.
- Pour the frosting over the warm cake right after it comes out of the oven and let set.
