Ingredients

  • Pasta (uncooked) – 2 cups (~170 g)
  • Beetroots – 1 large or 2 small (~170 g)
  • Feta (or Paneer) – 100 g
  • Garlic Cloves – 2 to 3
  • Olive Oil – 2 tsp
  • Lemon Juice – 1 tbsp
  • Salt – to taste
  • Crushed Black Pepper – to taste
  • Fresh Basil or Cilantro (for garnish)

Instructions

  1. Wash, peel, and chop the beetroots. Sauté chopped garlic in olive oil until fragrant.
  2. Add beetroots and salt; sauté for 1–2 minutes. Cover and simmer with water until tender.
  3. Cook pasta according to package instructions; reserve some pasta water before draining.
  4. Blend cooked beets, sautéed garlic, feta (or paneer), lemon juice, and some reserved pasta water until smooth.
  5. Combine drained pasta with beet sauce, adjust consistency with more water if needed.
  6. Garnish with crumbled feta and fresh herbs before serving warm.
