  • 3/4 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking soda
  • 1/2 cup brown sugar
  • 1 1/2 cups chopped rhubarb
  • 3/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine oats, flour, softened butter, salt, baking soda, and brown sugar until coarse crumbs form.
  3. In a saucepan over medium heat, mix rhubarb, granulated sugar, cornstarch, and water. Simmer until the mixture thickens and becomes clear, about 5-10 minutes.
  4. Press most of the crumb mixture into a greased 8×8-inch baking dish. Pour the warm rhubarb filling over it and sprinkle the remaining crumbs on top.
  5. Bake for 30-40 minutes until golden on the edges and set in the center.
  6. Allow to cool completely before cutting into bars.
